DOS PANES POMUCHENSES: Hojaldra y pan de pichón (o sandwichón).

When we moved to Campeche, there were two things that people consistently recommended we try on the way to Mérida; one is the cochinita from Hecelchakán —of which, I have already spoken in detail— and the other, is the bread from Pomuch, which I also mentioned, and I told you I was going to give you a couple of recipes, that, as promised, I include here.
Well, the cochinita was undoubtedly a great find, but not a great surprise —it is expected for the best cochinitas in the world to be found in Mayan land—, but the bread really caught my attention, because I didn't know what to imagine (it didn't help that another Chilango told me: it is like anything you've ever tried). And he was right, in more than one sense, because the deliciousness of the Pomuch bread is born from a set of very particular contradictions.
The first is the indistinct use of salty, sweet, and spicy ingredients. My favorite, the hojaldra —for example— is like a strudel, but filled with ham, cheese, and jalapeños, instead of apples, and prepared with a very unusual laminating technique (which, if you don't know, you can watch it in the video, because there is no point in wasting your time by trying to explain it when the images do a much better job than I do).
Another singular ingredient, present in both the hojaldra and the pan de pichón (the other piece that I include here, and that is said to have been invented in La Huachita, my favorite bakery at Pomuch) is the cheese, since the kind that is used is a very particular one known as “Daysi” (or “Deysi”) cheese, a type of northern cheddar, that belongs to a family of Chihuahuan cheeses of Mennonite origin.
In the case of the aforementioned, Huachita, which is one of the most famous bakeries on the Pomuch area (founded at the end of the 19th century), there are two other elements that separate their bread from others —according to one of its owners— is its artisanal preparation in its huge and beautiful handmade stone oven, and the use of New Zealand butter —in combination with the lard—, which he considers essential for the flavor.
Pomuch is a town with deep-rooted Mayan traditions, its particular celebration of Hanal Pixán (or Day of the Dead) and its people's devotion to it, are proof of an ancient Mayan worldview that is still alive. For the people of Pomuch —as for other traditional communities in the region— the separation between the living and the dead does not exist as it does in Christian thought, it is a belief that preserves its roots, despite evangelization. A few years ago, I was able to grasp this idea a little better when, in the Pomuch cemetery, I asked an old man —who was always there— why he spent day and night among bones and graves if nobody forced him or paid him to do it: because this is my house —he told me with a smile on his face— the other one I have is borrowed.
It is surprising —and at the same time, it is not— that a community as traditionally Mayan as Pomuch, has an exceptional version of a food, that is so symbolically opposed to the culture of their ancestors, because, after all, food is communion. Hence, Hanal Pixán means "soul food".
Pomuch is one of those small and colorful peninsular towns where apparently nothing happens, but if you open your eyes, you will find magic in any corner. Something like that happened to us... We were walking around the church, when, from a typical Mayan house with a palm roof and rounded adobe walls —which was located on the perimeter of the plaza— a very nice old man came out with whom, from one moment to another, we started a long conversation. He invited us into his patio and, to our surprise, he took a tunkul out. In case you are not familiar, the tunkul is a jewel of a Mayan musical instrument, of which very few copies remain, and even fewer people know how to play it; it is made from a tree trunk that is carefully chosen for this task —because of its specific qualities— and is left to dry for several years before it can be used. Everything that revolves around the practice of this instrument is part of a very complex ritual symbology.
So, it turned out that the old man was Santiago Estrella, a highly respected traditional musician in the region; he told us about his music, about his group —a trio he formed with two other Mayan musicians—, and about some places and people with whom he had performed on stage (among them, two luminaries of Mexican ranchera music, Lola Beltrán, and Jose Alfredo Jimenez). We chatted for hours, and he also showed us some beautiful bird-shaped canes, that he made out of branches.
When, many years later, I told this anecdote to a dear friend who is an archaeologist and an expert in Mayan instruments, she confirmed the virtuosity of this great character that we were fortunate to meet. I highly recommend that you read her articles on the subject (here’s a link).
The two pieces of bread that I chose for these recipes, are the ones that are filled with ham and cheese, because they are my favorites ones, and because I like the two alternatives of the same delicious thing that they present, since —in terms of preparation, the bread-making techniques they are completely different: one is a sourdough-based artisan loaf, and the other is a laminated dough (with as I said, a not very common technique); regarding flavor, on the other hand, I also like the idea of having a savory party-like sandwich option, and another which is half lunch, half dessert, that can work perfectly as a munchie between meals.

HOJALDRA
Ingredients:
250 g of wheat flour
¼ teaspoon salt
1 spoon of sugar
165 ml of water *You can substitute the water for eggs, partially or completely. I have been doing the opposite lately, that is, removing the egg from certain bread recipes and replacing it with water, or some other liquid. I have found that in some doughs —as long as they are not cakey doughs that need the egg to rise—, adding it is not essential, and can even benefit in terms of flavor and lightness, sometimes. In this case, I did it and I'm not so sure that it was the right decision, because it is possible that the mass lacked a little more richness. My recommendation is to use half and half.
For the fat:
125 good quality butter
50 g of lard
60 g of all-purpose flour
For the filling:
35g Daysi or cheddar cheese *To be honest, I don't know if it was the brand I bought, but the cheddar did not melt at all. I have not explored if good Daysi cheeses are available in the city, or what other varieties are closer to it, but I will find out and let you know.
35 g of ham
Sugar to taste
Preparation:
First, prepare the fat...
Mix the flour, butter, and lard. Beat them together (preferably, with a mixer, if you have one and don't want to get tired) until they become clear and fluffy. Leave it to rest while you prepare the rest.
To make the dough...
Mix the flour, salt, sugar, and water, and knead until the mixture easily detaches from the surface (time may vary, it can take from 5 to 20 minutes, don't loose faith).
Separate the dough into six portions, and shape them into buns (don't forget, like I did, to save a little piece of dough —about 30 grams— to make the decorations at the end).
Spread some of the fat mix you made before, over the table and cover the buns generously. (Note: in all of the Campechan and Yucatecan recipes that I have found, it is recommended not to skimp on the amount of fat, so do not hold back, because, in addition, all the cooks that I have watched also agree that fat evaporates miraculously, and it disappears from the bread when it is baked. I'm not so sure about that being possible, maybe it's the Yucatan heat, but you just do as they say and don’t ask).
Let the buns rest for 2 hours.
Spread plenty of fat over the table, grab one of the buns and stretch it carefully with your hands, as much as you can, without breaking it.
Take a rolling pin (or whatever you're going to use to roll them if you don't have a roller, there are options, use your imagination… Not so much… hahaha).
Repeat the operation three times, rolling one layer of dough over the other, and adding more butter between each layer.
Then, spread the dough on top of the dough on the table, just like an old sock (or whatever your filthy mind is picturing).
Repeat the operation one more time.
Grease the surface again.
Roll out the dough to form a circular base, and cover it with the cheese, ham, and jalapeños.
Place the second portion of dough on top and stretch it to completely cover the base, squeezing the sides well so that the filling does not overflow.
Take the remaining piece of dough you saved, add flour and form a long strip.
Place it over the bread in the shape you want.
Cover with plenty of sugar.
Bake for around 40 minutes at 225ºC or until the surface is completely browned.
PAN DE PICHÓN (O SANWICHÓN)
Ingredients:
200g of flour
120g of water
1 teasp. of salt
1/2 teasp. of yeast
Filling:
Ham, Daysi cheese, and jalapeños to taste.
Preparation
For the dough, I used my go-to bread & pizza dough. Since the results in leavened doughs are always dependent on uncontrollable variables anyway (like the weather), unless I want to make very specific amounts of bread for sale, or something like that, I usually eyeball the measurements of the ingredients. I consider it more effective to pay attention to the consistency of the dough than to the exact measurements, but, on average, I use 2.5 percent of salt in relation to the total amount of dough (if I use 1 kg of dough, for example, I use 25 g of salt), 2 percent yeast, and 65 percent water.
I always let the dough rest overnight. I don't always use it right away in the morning—depending on the weather, I've left it out in the open for almost the full 24 hours—if I take longer, I keep it for about 8 more hours, refrigerated.
To form the bar, nothing I tell you will help you as much as if you watch the video because it's one of those things that you have to get the feeling of.

Cuando llegamos a vivir a Campeche, había dos cosas que de forma consistente nos recomendaba la gente que fuéramos a probar de camino a Mérida; una, es la cochinita de Hecelchakán —de la que ya hablé con lujo de detalle— y la otra, es el pan de Pomuch, que mencioné también, y les dije que les iba a pasar un par de recetas, que, como lo prometido es deuda, acá están.
Bueno, pues lo de la cochinita fue sin duda un gran hallazgo, más no una gran sorpresa —se espera que las mejores cochinitas del mundo estén en tierra maya—, pero lo del pan me llamó la atención, porque no sabía que imaginar (no ayudó a mi curiosidad que otro chilango, arqueólogo, me dijera: no se parece a nada que has probado). Y tenía razón, en más de un sentido, porque la deliciosidad del pan de Pomuch nace de un conjunto de contradicciones muy particulares.
La primera, es el uso indistinto de ingredientes salados, dulces y picantes. Mi favorito, la hojaldra —por ejemplo— es como un strudel, pero relleno de jamón y queso con rajitas, en vez de manzanas, y preparado con una técnica de laminado muy poco común (que, si no conocen, pueden verla en el vídeo, porque no tiene caso que pierda su tiempo tratando de explicarles, cuando las imágenes lo hacen mucho mejor que yo).
Otro ingrediente singular, presente, tanto de la hojaldra como del pan de pichón (la otra pieza que incluyo aquí, y, que se dice, se inventó en La Huachita, mi panadería pomuchense favorita) es el queso, ya que se utiliza, específicamente, una variedad muy popular en la península que se conoce como queso “Daysi” (o “Deysi”), y que es un tipo de cheddar norteño, perteneciente a una familia de quesos chihuahuenses de origen menonita.
En el caso de la mencionada Huachita, que es una de las panaderías más famosas del lugar (fundada a finales del siglo XIX), otros dos elementos que separan a su pan de los demás —según nos platicó uno de sus dueños— es la preparación artesanal en su bello y enorme horno de piedra y el uso de mantequilla neozelandesa —en combinación con la manteca—, que éste consideraba fundamental para el sabor.
Pomuch es un pueblo de tradiciones mayas arraigadas, su particular celebración del Hanal Pixán (o Día de Muertos) y su devoción a ésta— es la prueba de una cosmovisión que sigue viva. Para el pueblo pomuchense —como para otros pueblos tradicionales— la separación entre vivos y muertos no existe como existe para en el pensamiento cristiano, es una creencia cuyas raíces no pudieron desterrarse, a pesar de la evangelización. Hace algunos años, pude percibir mejor esta idea, cuando, en el cementerio de Pomuch le pregunté a un anciano —que siempre estaba ahí— por qué pasaba día y noche entre huesos y tumbas, si nadie lo obligaba o le pagaba por hacerlo: porque esta es mi casa, —me dijo con una sonrisa en la cara— la otra la tengo prestada.
Resulta curioso —y a la vez, no— que un pueblo, tan apegado a la tradición maya, como lo es Pomuch, tenga una versión excepcional de un alimento, tan simbólicamente opuesto a la cultura de sus ancestros, pues, a final de cuentas, el alimento es comunión. De ahí, que Hanal Pixán signifique “comida de almas”.
Pomuch es uno de esas pequeñas y coloridas poblaciones peninsulares donde aparentemente no pasa nada, pero si abres los ojos, encuentras magia en cualquier esquina. Algo así nos pasó a nosotros… Andábamos paseándonos por la iglesia, cuando, de una típica casita maya con techo de palma y paredes de adobe —que se encontraba sobre el perímetro de la plaza— salió un anciano muy agradable con el que, de un momento a otro, entramos en una larga plática. Nos invitó a pasar a su patio y para nuestra sorpresa sacó un tunkul. Por si ustedes no lo conocen, el tunkul es una joya de instrumento musical maya, del que quedan muy pocos ejemplares, y aún menos personas que lo sepan tocar; se fabrica con un tronco de árbol que se elige cuidadosamente para dicha tarea —por sus cualidades específicas— y se deja secar varios años antes de poderse usar. Todo, lo que gira en torno a la práctica de este instrumento, es parte de una compleja simbología ritual.
Pues, resultó que el anciano era Santiago Estrella, un músico tradicional muy respetado en la región. Nos platicó de su música, de su grupo —un trío que formaba con otros dos músicos mayas— y de algunos lugares y personas con las que se había presentado en un escenario (entre ellas, dos luminarias de la música ranchera mexicana, Lola Beltrán y José Alfredo Jiménez). Platicamos un buen rato con el, también nos enseñó unos bastones hermosos de madera en forma de aves, que hacía con ramas silvestres.
Cuando, muchos años después, le platiqué esté anécdota a una querida amiga que es arqueóloga, precisamente experta en instrumentos mayas, me confirmó la virtuosidad de este gran personaje que tuvimos la fortuna de conocer. Los dos panes que escogí para estas recetas son los que van rellenos de jamón y queso, porque son mis favoritos y porque me gustan las dos alternativas de una misma cosa rica que presentan, pues cuanto a técnica de preparación, se trata de dos panes completamente distintos: uno es una barra artesanal a base de masa fermentada, y el otro es una masa laminada (con una técnica, como dije, poco común. En cuanto a sabor, por otro lado, me encanta la idea de tener una opción salada tipo sándwich de fiesta y otra, que es mitad lunch, mitad postrecito, perfecta como munchie comidas.

HOJALDRA
Ingredientes:
250 g de harina de trigo
¼ de cucharadita de sal
1 cucharada de azúcar
Preparación:
165 ml de agua *Pueden sustituir el agua por huevo, parcialmente, o en su totalidad. A mí me ha dado por hacer lo contrario, es decir, por quitarle el huevo a ciertas recetas de pan, y sustituirlo por agua o algún otro líquido. He encontrado, que algunas masas —siempre y cuando no se trate de las de panqué que necesitan el huevo para esponjarse—, en las que no es indispensable e incluso pueden beneficiarse en términos de sabor. En este caso lo hice y no estoy tan segura de que haya sido la decisión correcta, pues porque es posible que le haya faltado un poco más de riqueza a la masa. Mi recomendación es que intenten, mitad y mitad.
Para la grasa:
125 buena mantequilla
50 g de manteca (o asiento)
60 g de harina de trigo
Relleno:
35 g de queso daysi o cheddar *Para serles sincera, no se si fue la marca que compré, pero el cheddar se derritió para nada. No he explorado si se consiguen buenos quesos Daysi en la ciudad, o qué otras variedades se le asemejan mejor, pero averiguo y les platico.
35 g de jamón de pierna
Azúcar al gusto
Preparación:
Primero se prepara la grasa…
Mezclen la harina, la mantequilla y la manteca. Bátanlas (de preferencia, con una batidora —si no quieren cansarse— si no tienen, ni modo) hasta que se aclaren y esponjen. Déjenla reposando mientras preparan lo demás.
Para hacer la masa…
Mezclen la harina, el sal, el azúcar y el agua, y amasen hasta que le mezcla se despegue fácilmente de la superficie (el tiempo puede variar, les puede tomar desde 5 hasta 20 min, no se desesperen).
Separen la masa en seis porciones.
Boleen las porciones. (No se les olvide como a mí, que lo acabé haciendo hasta el final, guardar un pedacito de masa —como 30 grs— para hacer los adornos al final).
Embarren la mesa con un poco de mantequilla y cubran las pelotitas, generosamente con la grasa que hicieron. (Nota: en todas las recetas campechanas y yucatecas que he visto, se recomienda no escatimar con la cantidad de grasa, así que no se repriman, porque, además, también todas las cocineras y cocineros que he visto dicen que toda esa grasa se evapora como por obra y gracia del espíritu santo, y desaparece del pan. Yo no estoy tan segura de eso sea posible, tal vez que es el calor de Yucatán, pero ustedes hagan como ellos dicen y mejor ya ni pregunten).
Déjenlas reposar durante 2 horas.
Embarren una buena porción de la mesa de trabajo con abundante grasa, agarren una de las pelotitas y extiéndanla lo mejor que puedan con los dedos
sin romperla.
Tomen un rodillo (o lo que sea que van a usar para enrollarlas, si no tienen rodillo, hay opciones, échenle imaginación… No tanta… jajaja).
Repitan la operación tres veces, enrollando una capita de masa sobre la otra y agregando más mantequilla entre cada una.
Luego, desfunden la masa sobre la masa sobre la mesa, como si fuera un calcetín viejo (o lo que sea que su mente cochambrosa se esté imaginando).
Ahora, repitan la operación una vez más.
Vuelvan a engrasar un poco la superficie.
Extiendan la masa hasta formar una base circular, cúbranla con el queso, el jamón y las rajitas.
Coloquen la segunda porción de masa encima y estírenla hasta cubrir la base por completo, apretando bien los lados para que no se desborde el relleno.
Tomen el pedacito de masa restante, agreguen harina y formen una tira larga.
Colóquenla sobre el pan en el dibujito que quieran.
Cubran con abundante azúcar.
Horneen alrededor de 40 minutos a 225ºC o hasta que la superficie se dore por competo.
PAN DE PICHÓN (O SANDWICHÓN)
Ingredientes:
200 g de harina
120 g de agua
1 cc de sal
1/2 cc de levadura
Relleno:
Jamón de pierna, queso daysi y rajitas al gusto.
Para la masa use la receta que uso de cajón para panes campesinos, pizzas, etc. Por lo general —a menos que quiera hacer cantidades muy específicas, para venta o algo así—, mido los ingredientes al tanteo, porque, de todos modos, como cualquier fermento, las resultados en el pan son dependientes de variables incontrolables —como el clima— así que, considero más efectivo poner atención a la consistencia de la masa que a los gramajes exactos, pero, en promedio, uso el 2.5 por ciento de sal del total de lo que use de masa (por ejemplo, si uso 1 k de masa, uso 25 g de sal), un 2 por ciento de levadura y un 65 por ciento de agua.
Siempre dejo reposar la masa de la noche al día siguiente. No siempre la uso de inmediato en la mañana —dependiendo el clima, la he dejado a la intemperie casi las 24 horas completas— si me tardo más, la puedo mantener alrededor de unas 8 horas más, pero en refrigeración.
Para formar la barra, cualquier cosa que les diga no va a servir tanto como si ven el videíto, porque es una de esas cosas a las que hay que pescarle el feeling.
